Carlos Capistran is currently the Executive Chef at Celebration Restaurant and Snack Bar in Dallas, Texas, as well as cooking expert and author here at Chef Carlos is constantly experimenting with Paleo recipes and loves helping improve people’s lives through the food he cooks.

Chef Carlos has received the award for Best Dish at the 3rd International Food Festival in Puerto Aventuras, Mexico.

When I was introduced to The Paleo Diet, I was very skeptical. I have tried so many times and so many different ways to eat healthy in the past, all unsuccessfully. Plus, I am a chef which made it even harder- I am around delicious, non-paleo food for 10 hours a day! However, being in my late 30s and recently helping my mother (who is in her 70s) go through a very scary time in the hospital, I realized that I need to change the way I eat and take care of my body.

My fiance helped me get through the first week of eating paleo which was the hardest for me. I am now 20 days in to a 30-Day challenge and have already noticed DRASTIC improvements in my physical appearance, how I sleep, and how I feel in general. For the last 8 years I have suffered from a very ugly and painful infection on my face (most likely Rosacea, although my doctor has never given it a name). I do not know if changing my diet cured my infection, but I have not taken medicine for it since I started eating Paleo, and have not had a breakout since.  I can only assume this is what healed my face as it is the only thing I am doing differently.

In addition, I used to need one or two alarms to wake up in the morning, and even then felt exhausted. I now wake up without an alarm and am full of energy. I feel lighter. I have cheated once or twice with a small amount of grains and sugar, but every time I eat something that “isn’t allowed,” I feel sick and it just convinces me more that eating paleo is a good choice for me. After this 30-Day Challenge is over, I have no intention of returning to my past ways of eating. I will do my best to keep myself healthy, and I think The Paleo Diet is going to help me do that.
